Low and Slow Pork Belly Pieces

Ingredients:

  1. 1 x Packet Low and Slow Pork Belly Pieces (ready spiced)
  2. 2 x Table spoons Brown sugar
  3. 100g butter
  4. 100ml BBQ Sauce

Method:

  1. Set up your Weber for indirect cooking at 120 degrees celsius, or if you are using a smoker or oven preheat to 120 degrees celsius.
  2. Place pork belly pieces uncovered onto the grid and cook for 2 hours at 120 degrees.
  3. Place in a foil tray and add 2 x table spoons of brown sugar , 100g butter and 100ml BBQ.
  4. Cover tray with foil and place on the grid at 120 degrees for 1 hour.
  5. Remove foil and cook for another hour at 150 degrees celsius.
