750g pork fillet
50g mix bean sprouts
¼ cup Teriyaki marinade
1 medium red pepper, sliced thinly
250g tomatoes, halved
Soy dressing:
60ml cider vinegar
1 tablespoon soy sauce
80ml vegetable oil

Preheat oven to 180°C. Brush pork with Teriyaki marinade. Cook pork in oven, brushing frequently with marinade, until browned and cooked through. Cover to keep warm. Meanwhile make soy dressing by whisking together all of the ingredients.

Place sprouts, leaves, peppers and tomatoes in large bowl with dressing. Toss gently to combine. Slice pork and serve with salad.
