Sauce:
30ml brown or white grape vinegar
45ml soy sauce
45ml tomato sauce
45ml sweet chili sauce or chutney
Stir-fry:
30ml cooking oil
450-500g pork cubes, cut into very thin slices
1 onion, thinly sliced
5ml chopped or crushed garlic
10ml finely grated fresh ginger
1 green pepper, seeds removed and thinly sliced or chopped
500ml shredded cabbage
1 small packet frozen, mixed vegetables or 2 tins mixed vegetables, drained
500ml cooked brown or white rice, well drained
Salt and pepper to taste

Mix all the ingredients for the sauce together
Stir fry- Heat oil in a frying pan or pot and fry pork in batches, until golden brown
Remove pork from the pan and keep aside
In the same pan, fry onion, garlic, ginger & green pepper until onion is soft. Add cabbage and fry for a few minutes. Add a tiny bit of water if necessary. Add mixed vegetables and stir-fry the mixture until the vegetables are just cooked. Season with salt and pepper.
Add the rice and pork and stir until heated through
Stir the sauce into the food and allow to simmer just enough until everything is warm. Taste for seasoning and add a sprinkle of salt and pepper if needed. Serve warm
