125g pork mince
125g beef mince
1 egg
50g crushed cream crackers
25g grated Parmesan cheese
1 clove garlic crushed or finely chopped
½ tablespoon dried parsley
½ teaspoon oregano
1 teaspoon thyme leaves
¼ teaspoon salt and a pinch of pepper
225g tin of tomatoes chopped (topping)
50g grated Parmesan cheese (topping)

Combine all ingredients except tinned tomatoes and 50g grated Parmesan cheese (toppings), in a mixing bowl. Shape into 12 meatballs. Arrange meatballs in a round baking dish. Microwave uncovered at High Power for 2 – 4 minutes or until meatballs are nearly done, rearranging them once.

Pour chopped tomatoes over meatballs and sprinkle with 50g grated Parmesan cheese. Cover. Microwave at High Power for ± 4 minutes or until heated through.
