2 medium apples
1 medium red onion
80ml chicken stock
1 tablespoon olive oil
4 x 280g loin chops
¼ cup lemon juice

Preheat barbeque. Cut each unpeeled, uncored apple horizontally into four slices. Heat oil in grill pan, cook apple and onion, turning until softened. Meanwhile, cook pork on heat oiled grill plate.

Stir plum sauce, juice and stock into apple mixture, simmer 1 minute. Serve pork with sauce.
