Freddy’s Offal Pot

Offal (±3kg) : 2 x pork hocks / 1 x pork tripe / 2 x pork tongues / 3 x pork knuckles

Cook the offal in a large pot on the stove. Add enough water to cover the meat and add 5 – 6 whole cloves. Cook for approximately 1½ hours until the meat is tender. Discard the water and cut the tripe into small pieces.

Place the offal in a black pot on the fire and add ½ litres of water. Mix the following ingredients and add to the offal:

2 x tablespoons medium curry powder
1 x tablespoon mustard powder
1 x tablespoon turmeric
½ cup brown sugar
2 x cups vinegar
6 – 8 whole cloves
4 x large onions, cut in rings
Optional : Other veggies of your choice
Cook for approximately 2 hours on medium heat. Serve with rice and butterbeans.
